Olive grove

Our stories / Olive grove

Our olive grove near the Adriatic Sea soaks up abundant sunlight and flourishes amid the untouched nature of Lake Vrana. Every tree tells the story of the generations who tended it by hand, yielding olives of exceptional quality.

Every drop of Leut oil begins in the olive grove. There, between the Adriatic Sea and Lake Vrana, grow trees our family has cared for over generations – trees that repay that care with fruit, year after year.

Between the sea and the lake

Our olive grove lies in and around Pakoštane, where the sea meets Lake Vrana Nature Park, Croatia's largest natural lake. The nearby sea softens the winters and cools the summer heat, while the untouched nature around the lake gives the olives clean air and a rich, living environment.

The Dalmatian sun shines here almost all year round. The olives soak it up over the long summers and turn it into what you later taste in the oil – fruitiness, fullness and character.

Stony soil, strong trees

An old, gnarled olive trunk in our grove

Dalmatian soil is stony and sparse, but that is exactly what the olive likes. The tree has to send its roots deep to reach water and nutrients, so it grows more slowly but more strongly. The fruit from such trees is smaller, but more concentrated in aroma.

Trees that remember generations

Some of our trees are older than any of us. They were tended by our grandparents' hands, and today we care for them – by hand, with respect for the tree and the nature around it. We know every tree, watch how it copes with drought, the bora wind and rain, and adapt its care accordingly.

Care all year round

Work in the grove doesn't stop after the harvest. In winter and early spring we prune the trees so the canopies stay airy and the sun reaches every olive. In summer we keep an eye on the health of the trees and fruit, and in autumn we wait eagerly for the right moment to harvest.

The oil from our grove is organic, because we believe the best oil comes from treating nature with respect. To learn how the fruit becomes oil, read the story Process.

Autumn

Harvest

We harvest early and by hand, onto nets beneath the trees – and the olives go to the mill the same day.
